Discovering Italian Gastronomy: Product Knowledge, Food Preparation and Tasting
The Winter School “Discovering Italian Gastronomy: product knowledge, foodpreparation and tasting” starts from the interaction between human beings andtheir food. There are two main focuses: food beverages and people. On theproduct side, attention will be paid to raw materials and finished products, theeffects of preparation methods, the Italian combination of food substances andthe combination of dishes and beverages. On the human side, participants willunderstand how Italian people perceive their food and beverages and how totreat the sensory systems involved in the tasting and the appreciation of foodand beverages.
Admission requirements
EU and Non-EU students (University degree or Bachelor degree, Masterdegree) as well as PhD students.

The course is focused on 3 different aspects: product knowledge, foodpreparation, and flavour and tasting. After the two-weeks program the studentwill be able to:Product knowledge
- Identify Italian products that can be used as ingredients to createTuscan/Italian food
- Judge the quality of these products
- Explain the effect of the Italian environment and the production methods on flavour and structure
Food preparation
- Apply a number of preparation techniques and evaluate the effects on the flavour profile
Flavour and tasting
- Describe and recognize Italian flavours
- Describe and recognize taste sensations
- Describe, recognize and apply successful combinations of ingredients
- Describe, recognise and evaluate successful combinations of Tuscan/Italianfoods and beverages
The program will be based on an interactive program of masterclasses, fieldvisits to local food company/ies and cooperatives and work groups to explorekey issues linked to Italian Gastronomy.

The Foundation Course

Summer Schools
Intensive academic courses for international students and also for graduates.They mostly last from 1 to 6 weeks and take place in an international context, with students and lecturers coming from various parts of the world and all lectures delivered in English.They are characterized by nonconventional teaching formats (workshops, tutorials, excursions, cultural events, business testimonials, etc.) and a multidisciplinary approach. Professors are experts in their areas and have a keen interest in what they do.Summer Schools meet strict academic regulations: each grants at least 3 ECTS credits and the participants who successfully pass the final exams will receive an official academic transcript.
