Program description

Take your first steps towards becoming a professional chef in a region renowned for its food and artisan producers.

This menu focused programme allows you to immerse yourself in all aspects of the culinary arts.

It will give you a good foundation to start your journey, whether into industry as a trainee chef or continue onto the Level 5 Diploma to refine your culinary arts, kitchen operations and management skills.

Career Opportunities and Pathways:

When you have completed the Culinary Arts (Level 4) qualification you will be able to pursue intermediate-level employment and career opportunities as chefs in food production operations within the hospitality industry.

Or you can directly move onto the Culinary Arts (Level 5) programme and specialise in either Cookery or Patisserie. Or you can pursue other study options in culinary arts, patisserie, bakery or hospitality at diploma and degree level.

Admission requirements

Students are required to complete international qualifications equivalent to New Zealand NCEA Level 1 or 2 qualification. Entry requirements vary from country to country.

English language requirements:

You must have a level of English sufficient to be able to study at this level. If your first language is not English you should have an international English Language Testing System (IELTS) overall academic score of at least 5.5 (with at least 5.0 in each band) issued within the last two years, or a qualification considered to be equivalent to the above:

TOEFL Paper based test (pBT) - Score of 530 (with an essay score of 4.5 TWE)

TOEFL Internet-based test (iBT) - Score of 46 (with a writing score of 20)

University of Cambridge English Examinations - FCE or FCE for schools with a score of 162. No less than 154 in each skill

Pearson Test of English (Academic) - PToE (Academic) score of 42

City & Guilds IESOL - B2 Communicator with a score of 42

Special Entry

Special Entry approval is required from the Head of Department or delegate.
Skills for tertiary study (including literacy and numeracy) may be acquired through study, work and/or life experience. If you can demonstrate these skills you may apply for Special Entry.
Qualifications other than those listed in the Entry Requirements above will need to be assessed for equivalence, and applicants holding these qualifications will need to apply for Special Entry approval from the Head of Department or delegate.
