This program prepares for the exercise of the profession of cook or cook specializing in vegetable cuisine.It is aimed at people who already have cooking skills and wish to adapt their food offer to the needs of a growing vegan clientele.The goal of this program is to enable students to develop the skills and versatility needed to provide complete vegan menus that are both tasty, nutritionally balanced and environmentally friendly.
The content of this training revolves aroundthree main areas:
- Knowledge of vegan products and their use
- The design and adaptation of recipes using vegetable substitutes
- The acquisition of basic knowledge in nutrition
This training also aims to deepen vegan thought according to the following three dimensions:
