The department of Sports Medicine was established in August 2003. The Kaohsiung Medical University has made a substantial commitment to being the leading Sports & Exercise Medicine educator in Taiwan. The course aims to provide students with a comprehensive and contemporary curriculum and is designed to merge medical principles and sciences to facilitate physical performance in sports. Since 2008, the department has featured a new target for future development – “health promotion” with a modern concept of sports & exercise medicine, which emphasizes custom exercises for each individual. Our course offers a full-time four-year Bachelor's degree. The curriculum focuses not only on learning the basics of medical and sports sciences but also on health care management. The basic science of sports medicine is emphasized over the first two years, such as Human Physiology, Anatomy of the Human Body, Health Management, Kinesiology, Exercise Nutrition, and First-Aid. During the final two years, the course provides excellent opportunities in practical training which can be used as a foundation to further students with an aim to either obtain professional certifications e.g. "fitness leader" and "athletic trainer", or future research work. The University has worked closely with professional sports clubs, health institutes, and hospitals, and is responsible for providing a better medical service to southern Taiwan. Department of Public Health was established in 1990 as an unit of Preventive Medicine. It began a M.S. program in 2005.The mission is to educate and disseminate knowledge with the aim of preventing disease and promoting the health of populations in .

The program focuses on the applications of theory to clinical practice and prepares students to be advanced aging and long-term care professionals. The program trains students to acquire 8 professional competencies, including advanced professional intelligence, multi-disciplinary collaboration, management capability, research capability, critical thinking, evidence-based humanity care, lifelong learning, and diverse cultural capability.

The Graduate program of the Food Science and Technology at the Central Taiwan University of Science and Technology offers the program of study leading to the Master’s Degree. We have a strong tradition in several research areas including food chemistry and analysis, food microbiology, food processing-bakery, dairy and fermented products, sensory evaluation, fermentation engineering, food biotechnology, and the research and development of functional foods and Chinese medicines. The Master’s program requires 30 semester hours of course work including a thesis based on research for MS students. Established in 2006, the graduate program of the Department of Food Science and Technology has a state-of-the-art facility with well-equipped research and teaching laboratories (Food Chemistry and Analysis, Food Microbiology, Sensory Evaluation, Spectrophotometer Room, Chromatography Room, and Cell Culture Room), pilot plants for bakery, Chinese cuisine and foodservice and faculty and staff offices. The Occupational Therapy (OT) program was established in 1988 as a division of the School of Rehabilitation Medicine , and the OT division became an independent school in 2000. The O.T. program is a 4-year entry-level educational program that offers a Bachelor of Science degree to the students. We enroll about fifty new students per year.

Graduate Institute of Athletics and Coaching Science was created in 2012 following the merger between the Graduate Institute of Coaching Science (created in 1994) and Graduate Institute of Sport Training Science (created in 2003). The aim of the Institute is to foster excellent coaches and to train students studying in coaching science.

Graduates can take recommendation examinations and/or joint enrolled distributions of nursing category by means of “The United Entrance Exams for Two-year Divisions of Senior College”, or they can continue to study into two-year divisions of senior college, university, or research institutes of medical nursing and related departments of organism either in or out of the country.

The mandate of our dental technology program is to educate and train students towards expertise in dental technology. This technology includes denture design, laboratory procedures, and research and development in dental materials.
