71 Food and Beverage Associate of Applied Science Programs

The Associate of Applied Science Degree in Food and Hospitality Management provides students with the basic and advanced skills, practice, and experience needed to build a professional career as a food service manager. This degree program will equip students to advance into progressively more responsible supervisory roles as their experience and skills develop. Components of the degree program include in-depth supervisory and management theory, guest service as well as hands-on food preparation practice.

The Associate of Applied Science in Culinary Arts Program is designed to provide the necessary skills that prepare individuals for entry-level professions in culinary and hospitality services. Students will learn about safety and sanitation, recipe/menu planning, food processing, purchasing, and the art and science behind food preparation.

The Associate of Applied Science Degree program in Culinary Arts with an emphasis in Korean Cuisine is a 92-unit program defined by curriculum with courses of rigorous culinary training, food business management, and study of social and scientific aspects of food. This program focuses on providing hands-on experience of Korean culinary practices along with a profound understanding of the nature of Korean food and ingredients.

This Associate of Science in Hospitality and Restaurant Management prepares students for mid-level or Manager-In-Training position in the hospitality industry. Students gain practical and management training in food safety and sanitation, food production, dining room service management, supervision, cost control, financial accounting, lodging management, and hospitality law.

This program prepares individuals to provide professional chefs and related hospitality services in restaurants and other commercial food establishments. This includes instruction in recipe and menu planning, preparing and cooking foods, supervising and training kitchen assistance, the management of food supplies and kitchen resources, including cost and inventory controls, aesthetics of food preparation and presentation, as well as training in a wide variety of cuisines and culinary techniques.

Located just north of Seattle, the Baking and Pastry Arts program at Edmonds College prepares students for a career in the baking industry. Students can choose to earn a one-year Baking Certificate or a two-year Associate of Technical Arts (ATA) Baking Degree. Students will learn important foundational skills, such as entremet, specialty cakes, plated desserts, tarts, petit fours, French pastries, artisan bread, and viennoiserie. In addition to fulfilling the role of the purchaser, bakery manager, and sous chef, degree students will also create chocolates, confectionery, a wedding cake and an edible showpiece.

The Culinary Arts Associates in Science is an intentional and specific expansion of the Hospitality Management program at Mission College. Students gain a solid command of traditional and modern food preparation, presentation, and service practices common throughout the industry. Menu planning cost control and maintaining a safe, fair, and equitable working environment are reinforced. A complete chef’s uniform is required.

The program prepares students for career opportunities in restaurants, catering, hotels, theme parks, and other foodservice businesses. Students gain practical training in the use of commercial equipment and acquire the skills necessary to be successful in the field of culinary arts, such as: knife skills, food production, presentation, menu development, portion control, cost control, menu planning, and nutrition.

The Baking & Pastry Program at Riverside City College focuses on professional learning objectives through our Career & Technical Education division. As the program unfolds, students within our community and surrounding areas will learn the fundamentals of baking and pastry arts, from yeast dough formulation to cakes and pastries from around the globe. Additionally, students will learn the proper food safety and sanitation practices set forth by industry benchmarks. This knowledge is captured through traditional styles of learning, as well as a hands-on approach where students can grasp a better understanding of the material. As they advance through the program, students continue representing their personal styles and cultural backgrounds through their plated desserts to advanced techniques such as chocolate and sugar artistry. Students are encouraged through critical thinking on how baking ingredients function and the roles they contribute throughout the baking process. To further enhance their knowledge and outreach within the community, students will need to communicate and collaborate with industry partners and leaders to solidify their learnings.

The Associate Degree in Baking and Pastry provides marketable skills necessary for advanced success in the baking and restaurant industry. Graduates learn management theory, business operations, and baking and pastry skills necessary to start their pastry operations or assume management positions in pastry, catering, and restaurant firms. Core classes should be taken in the recommended order for maximum success.

Laney College offers two majors in the Culinary Arts. These two-year certificate programs provide students the practical knowledge, skills and experience to succeed in creative and rewarding careers in the restaurant and hospitality industry.

Fully accredited by the American Culinary Federation (ACF) Education Foundation, our program meets the same high standards as top programs across the country. You will develop on-the-job experience in cooking, baking, budgeting, purchasing, marketing, personnel management, and menu planning at our student-run gourmet restaurant.

An Associate of Applied Science Degree covers commercial food preparation, baking, and foodservice management and can lead to higher education.

Have a passion for food or creating new recipes? Then our partnership program may be for you! Students will complete the first year of their studies at Salem Community College, and then attend a summer semester and second year at Rowan College of Burlington County. Studies include professionalism, basic principles and techniques of a professional kitchen, sanitary food handling, science and nutrition, event planning, culinary methodology, food service operation and culinary critique.
